ROSÉ by ¡HOLA! is made in the Penedès region of Catalunya, just an hour North-West from the historical city of Barcelona. The Penedès region is known for making the best cavas in Spain but not that much for making also the best rosés in Spain. Vision, gut feeling and lots of hard work have contributed to the creation of our ROSÉ by ¡HOLA!. It was our goal to favour quality above all that has made the dream of this beautiful rosé a reality for wine lovers around the world. VineyardTempranillo (low color skin) and Syrah from the Penedés area. Grenache from the Terra Alta area.
Vineyards between 15 and 30 years old, planted on clay-calcareous soils.
Harvest-methodMedium productions, between 8 and 9,000 kilos. To make elegant and fine rosés, very low productions give much more concentration both in color and tannin and make production difficult. Productions a little higher than those desired for reds give slower maturation and allow picking at the good point of freshness without easily fall into overripeness.
Vinification methodThe grapes picked by hand and by machine are cooled at the entrance to the winery. Cold maceration (temperature below 10ºC) is carried out inside the press, where it is macerated for only two hours, seeking only the slight extraction of color, leaving the structure of this wine fresh, tense and clean as a white wine. but with the volume and strength of a rosé, almost confusing it with a blanc de noir.

The must is decanted to separate the burbas, and it ferments clean, without turbidity. Neutral yeasts, maintaining the expression of fruit, without fermentative aromas to maintain the limpidity in the expression of the wine. Temperature at 16ºC. It is kept on its lees for two months after fermentation.

Subsequently, the coupage and clarification of the wine is carried out prior to bottling. Throughout the elaboration, the use of products or adjuvants of animal origin is avoided, with which this wine has vegan certification.
